Robusta Coffee Crème Caramel
The French culinary influence on Vietnam is unmistakable, and it is perhaps most famously represented by the beloved bánh flan. However, we wanted to elevate this classic with a distinctly local, Propaganda twist. Enter our Robusta Coffee Crème Caramel.
As you may know, Vietnam is one of the world’s leading producers of Robusta coffee, a bean we prize for its bold, earthy, and slightly chocolatey profile. In this dessert, we bake a traditional, silky, and delicate egg custard, but the magic happens when we bathe it in a dark, rich caramel infused with strong Vietnamese Robusta coffee. The deep, slightly bitter notes of the coffee perfectly cut through the sugary sweetness of the caramel, creating a highly sophisticated, balanced bite. Every spoonful melts in your mouth, leaving a lingering, roasted aroma that we think is the absolute best post-meal pick-me-up.

Avocado, Chia Seed & Coconut Milk Pudding

However, in the beautiful realm of Vietnamese desserts, avocado has long been celebrated for its natural, buttery sweetness, frequently taking center stage in our local smoothies and ice creams.
Our new Avocado, Chia Seed & Coconut Milk Pudding is our love letter to this tradition, modernized for today’s health-conscious diner. When we bring this dessert to your table, you will immediately notice its visual appeal. We layer vibrant, pale green avocado puree with plump, textured chia seeds and rich, velvety coconut milk. It is incredibly light, yet deeply satisfying. Black Sticky Rice, Mango, Pandan Gelato, and Home-Made Coconut Cream
For our guests seeking an absolute explosion of Southeast Asian flavors, we highly recommend this magnificent creation. We designed this dessert to be a textural wonderland that playfully contrasts both temperature and taste.
At the base of the bowl, we lay down a bed of warm, chewy black sticky rice, which carries a naturally nutty and earthy sweet flavor. Resting alongside the warm rice are generous slices of vibrant, perfectly ripe tropical mango. The crown jewel of this dish, however, is a large scoop of bright green pandan gelato. Pandan—which we affectionately refer to as the vanilla of Southeast Asia—lends a sweet, grassy, and highly aromatic flavor that perfectly bridges the gap between the fresh fruit and the warm rice.
To tie it all together, we generously drizzle the entire dish with a luxurious, warm, home-made coconut cream. The contrast between the freezing cold pandan gelato and the steaming warm sticky rice and coconut cream is simply divine. It is hearty, comforting, and beautifully complex.
